Chicken Sopas

Chicken Sopas is an easy to make soup that can fill you up and warm up cold days.

It has been a while since I last had Chicken Sopas and the last time was on our team offsite. I belonged to the find-something-useful-to-do committee as I observed the pros in the chicken. A few dishes later; a big pot was served and it was Chicken Macaroni Soup (or Chicken Sopas). It was memorable because in my haste to try it; I immediately took a sip and burnt my tongue. However, that didn’t stop me as I was going back for more after finishing my cup.

Chicken Sopas can be considered as a legend (in my opinion) in terms of soup here in the Philippines. It is relatively easy to make and has many uses. It can be eaten as a snack or to go with rice. It can also be considered as a natural remedy for colds and cough (no approved therapeutic claims) or a great hangover cure. It is also a great way to have kids eat veggies since it has carrots and cabbage. It is healthy, delicious and it makes me wonder on why I haven’t tried making it before?

So without further ado, let me now start my attempt on creating this soup!

Chicken Sopas is an easy to make soup that can fill you up and warm up cold days.
Preparations - Can be Done in Parallel
  1. Boil the chicken until the meal turns white. Allow chicken to cool down and start shredding it into long strands. Do keep the chicken stock as that will be our base.
  2. Boil the elbow macaroni so that the pasta would soften. Although avoid overcooking them as they will become soggy.
  3. Slice the cabbage into small long pieces; as for the carrots, dice them
Initial Cooking - Pan
  1. In a pan, saute the garlic first; followed by the onions once the garlic turns brown.
  2. Add the carrots to to the mix and saute for a minute or two
  3. Add the chicken and continue to saute
  4. Add the cabbage and continue to saute
  5. Add the macaroni pasta and continue to saute; prepare to transfer everything into a pot.
Cooking - Pot
  1. Transfer everything from the pan into a pot (where you boiled the chicken). Add water to the mixture and allow to simmer for a few minutes. Do add enough water because pasta absorbs water quickly.
Evaporated Milk
  1. Now here comes the part where personal preferences come into play. By default; you can empty the can of Carnation Evap Milk to the mixture Or;
  2. You can use the Carnation Evap Milk as an add-on where the person eating decides how much milk to add to his serving.

With regards to the amount of evap milk…

Personally, I just add enough (e.g one to two spoonfuls per bowl) just enough to still taste the chicken flavor but with a subtle sweetness.

Do note that too much milk will sweeten the soup and negate the chicken taste.
