Chicken Adobo

We already have pork adobo so why not chicken adobo? They have the same ingredients but there’s a slight difference in how they are cooked.

Marination
  1. Mix chicken, soy sauce, vinegar, peppercorn, bay leaves for 3 hours or overnight
Cooking Chicken Adobo
  1. Saute garlic until golden brown
  2. Remove chicken from marinade and fry them on both sides until golden brown.
  3. Pour marinade and water over chicken; let it boil
  4. After boiling, simmer until chicken is tender; (Add water if it starts to dry up).
Recipe Notes

First difference would be the chicken was fried for a few minutes (just to cook the bloody parts and give it a slight crisp skin) while for the pork, it was simmered immediately. Less water was used in this recipe so that the sauce would be thicker.

My frying pan doesn't have a cover so I had to transfer the chicken into a casserole to do the simmering. I usually simmer with the cover on.
