Pork adobo is one of the dishes that I have enjoyed since I was a kid. It has a lot of variants depending on where you are in the Philippines and I was happy to know that it was very easy to cook. The flavor is driven by soy sauce and vinegar. It is the first dish that I have tried cooking!

  1. Mix all the ingredients in a bowl and leave it there for a few hours (I leave it overnight)
  2. Bring to a boil (until you see huge bubbles) and lower down the heat to simmer it until the pork is tender

Here I tried adding Worcestershire sauce as I saw it in an ad for Worcestershire sauce.

Induction cooker - to bring to a boil, it was around 240C then I lowered it to 80C for simmering. The longer you simmer, the pork becomes more tender... however, do add water in case it dries up (which it will)

The feedback I got was that I have added to much soy sauce so feel free to adjust to your liking. This was because after adding 1/3 cup of soy sauce, I said to myself that perhaps it needs more soy sauce. Bad move on my part but personally, I felt the taste was just right.

Updated recipe on July, 2014 - Less of all seasonings. I think it is more balanced now.
